It’s National S’mores Day!

smoresThat’s right, there’s a holiday for everything. Today is National S’mores Day, which means I felt a moral obligation to eat some. I know that part of the fun of S’mores is roasting the marshmallows over an open flame, but whenever we do that, I eat like a hundred marshmallows. So I developed a recipe for individually wrapped, baked S’mores that are delicious, low-fat and portion-controlled. My kids love them too.

No Remorse S’mores
6 reduced fat Graham Crackers
6 tablespoons Marshmallow Fluff
Around 48 chocolate chips

Preheat the oven to 450. Tear six squares of aluminum foil. Break the Graham Crackers into 2 square-shaped halves (do this carefully). Center one half on the foil square. Drop a tablespoon of Marshmallow Fluff, then sprinkle with chocolate chips. Top with the other half of the Graham Cracker. Gently fold the foil over the S’more, and wrap it up so it is completely covered with foil. Repeat with the remaining 5 Graham Crackers. Place the six packets on a cookie sheet and bake in the oven for around 5-7 minutes, turning once.

You can also throw these on a hot grill after cooking burgers, as we did tonight. Watch carefully and take them off when they are nice and hot.

Yields 6 servings, 2 Weight Watchers points apiece.
