Jelly donut… cupcakes!
Chanukah is notable for many reasons, but the tradition of eating fried foods is both wonderful and unfortunate. On one hand, there’s nothing more delicious than hot potato latkes with cold sour cream and apple sauce. On the other hand, it’ll take a lot of hours on the treadmill to offset the impact of that treat. As if the potato latkes weren’t temptation enough, the other signature Chanukah dish is jelly donuts. I’ve made my own jelly donuts in the past, and they’re sublime. But deep-frying makes a colossal mess of the kitchen (and my arteries). A couple of years ago, I found this recipe for jelly donut cupcakes and I was sold. They’re (relatively) healthier, and the taste is almost as good as the real thing.
